I have always had difficulty making good Asian dishes, but I am slowly venturing out and developing recipes without onion and garlic that I can eat. I had gotten top sirloin steak some time ago, and I decided I needed to try to cook it, and as I was looking for recipes, I came across this Stir-Fried Beef and Broccoli recipe. It called for top sirloin steak, so I decided to try to make it. It has several steps that need to be done separately and then combined into a delicious dish. Some people like to use only broccoli florets, but I use the stem as well. The stem has glucosinolates which are well-known anticancer compounds. We also discovered hot sesame oil recently and love it. It is quite hot, so I only use enough of it to give dishes a little zing.

Ingredients

  • Olive oil

  • Toasted hot sesame seed oil

  • Toasted sesame oil

  • 1 lb top sirloin steak

  • 1 stalk celery, chopped

  • 1/2 green bell pepper, chopped

  • 1/2 cup carrot sticks

  • 1 small red pepper, sliced

  • 6 cups fresh broccoli

  • 1/2 cup water

  • 1/3 cup soy sauce

  • 2 tablespoons rice vinegar

  • 1 tablespoon rice wine

  • 2 teaspoons smooth peanut butter

  • 1 tablespoon fresh ginger

  • 1 teaspoon corn starch

  • 2 tablespoons toasted sesame seeds

  • Salt and pepper

  • 6 oz rice noodles

  • 1 cup rice

Directions

  • Cook the rice noodles or rice so they are ready when you need them. Fill a medium saucepan with water and bring to a boil. Add the noodles and cook for 3 minutes. Drain and rinse with cold water and set aside. Cook rice according to directions.
  • Make the stir fry sauce: Add the water, ginger, soy sauce, peanut butter, vinegar, wine, 2 tablespoons of regular sesame oil, 1 tablespoon of hot sesame oil and cornstarch in a small bowl. Mix until well blended. Set it aside.
  • To prepare the meat: Pour 2 tablespoons of oil in a cast iron skillet and turn on high, add enough beef strips to cover the bottom of the skillet without crowding. Cook on one side until done, turn and brown the other side. Sprinkle with salt and pepper. Set them aside. You might need to prepare 2 or 3 batches this way.
  • To prepare the vegetables: Place a large heavy skillet over medium heat. Once skillet is hot, add 1 Tbsp oil and the celery, green bell pepper, and carrots and cook until the vegetables are soft. Add the broccoli and sliced red peppers and stir for about two minutes. Add the meat and sauce and bring to boil. The sauce will thicken as it heats so stir carefully while heating so that it won’t stick. Be careful not to overcook so that the broccoli will stay al dente and bright green. Check for seasoning and adjust salt and pepper. Serve over rice or noodles garnished with toasted sesame seeds.
