Ingredients
1 1/2 cups finely ground almonds
3 1/2 oz dark chocolate bar
1 cup semi-sweet chocolate chips
2 tablespoons coconut oil
2 tablespoons almond or avocado oil
1 cup confectioners’ sugar
1 tablespoon vanilla extract
1/2 cup of rum
Directions
- In a large bowl, mix the ground almonds and powdered sugar.
- In a microwave safe bowl add the chopped chocolate bar, chocolate chips and coconut oil. Microwave until melted. Stir between microwaving to make sure all the chips and chocolate has melted.
- Add the almond/avocado oil and vanilla and blend well. Pour over the ground almonds. Mix well, form into balls and place on wax paper.
- Roll in confectioners’ sugar. Store covered for a week, if they last that long!
