  • 1 1/2 cups finely ground almonds

  • 3 1/2 oz dark chocolate bar

  • 1 cup semi-sweet chocolate chips

  • 2 tablespoons coconut oil

  • 2 tablespoons almond or avocado oil

  • 1 cup confectioners’ sugar

  • 1 tablespoon vanilla extract

  • 1/2 cup of rum


  • In a large bowl, mix the ground almonds and powdered sugar.
  • In a microwave safe bowl add the chopped chocolate bar, chocolate chips and coconut oil. Microwave until melted. Stir between microwaving to make sure all the chips and chocolate has melted.
  • Add the almond/avocado oil and vanilla and blend well. Pour over the ground almonds. Mix well, form into balls and place on wax paper.

  • Roll in confectioners’ sugar. Store covered for a week, if they last that long!
