Black bean burgers are a healthy alternative to beef burgers. They are heart healthy and have a lot of phytochemicals.

Cooking black beans from scratch makes the best tasting burgers.

We use bell pepper, celery and parsley in place of onion for flavor.

kcalIngredients
1 cup dried black beans
4 cups water
3 tablespoons of olive oil
1/2 bell pepper
1 stalk celery
1/2 bunch fresh parsley
2 teaspoons cumin
1 teaspoon chili powder
1/4 teaspoon smoked paprika
2 tablespoons Worcestershire sauce
3 tablespoons of Jamaican (or regular) barbeque sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup chick pea flour
2 eggs
Directions
- In a medium saucepan, soak the beans in the 4 cups of water overnight. The next day, drain and cover the beans with fresh water and bring to a boil. Boil until done, about 1 hour. You might need to add water during cooking, so the beans will not burn. Boil off as much of the excess water as possible once the beans are done.
- While the beans are cooking, chop up the bell pepper, celery stalk and parsley and sauté in a skillet. Once the vegetables are done, add the cumin, chili powder and paprika and sauté for a minute or two. Add the sauces and black beans. Mix well.
- Mash some of the beans with a potato masher. Add salt and pepper as needed. Add the flour and eggs. Shape into patties and fry in a skillet until set. Serve on a bun with BBQ sauce.
